One Pan Bacon & Eggs

The best way to start a slow weekend with a hard-earned breakfast feast.

INGREDIENTS

  • Ā½ Tomato.
  • 2 rashers Streaky bacon.
  • 1 large Egg.
  • 1 cup Baby spinach leaves.
  • 1 tsp olive oil.
  • Oregano, to taste.
  • Himalayan pink salt and pepper, to taste.

COOKING METHOD

  1. Heat non stick pan and add tomato. Cook for 2 minutes.
  2. Add bacon and cook for a further 1 minutes.
  3. Turn bacon and tomato over.
  4. Add egg & spinach.
  5. Drizzle the olive oil over the egg.
  6. Cover the pan and cook for 3 min.
