The best way to start a slow weekend with a hard-earned breakfast feast.
INGREDIENTS
- ½ Tomato.
- 2 rashers Streaky bacon.
- 1 large Egg.
- 1 cup Baby spinach leaves.
- 1 tsp olive oil.
- Oregano, to taste.
- Himalayan pink salt and pepper, to taste.

COOKING METHOD
- Heat non stick pan and add tomato. Cook for 2 minutes.
- Add bacon and cook for a further 1 minutes.
- Turn bacon and tomato over.
- Add egg & spinach.
- Drizzle the olive oil over the egg.
- Cover the pan and cook for 3 min.
